[OS X Emacs] tabs in text files

I am editing a TSV file (tab separated values) in Aquamacs and I just realized that the tab key does not always generate a tab character, which is a big problem. Sometimes I get a tab, sometimes I get a space, sometimes I get 2 tabs... The behavior is totally inconsistent:

trapping{tab} generates a space
trappings{tab} generates two tabs
safety guard{tab} generates one tab
rotating assembly{tab} generates one tab

The file is a "standard" .txt file encoded in utf-8.

Any trivial way to fix that ? I mean trivial as in "how can Aquamacs be made to behave like all the other standards Mac editors of the box" ?
