[OS X Emacs] html mode

Aquamacs starts html-helper-mode when I edit an html file.  I find it 
truly awful: no keybindings for the commonest things I do, lots of 
options that I have no clue about.  I would like to start the old html 
mode instead but I have no idea how to do that.  Would appreciate 
hints/leads.
