System Preferences -> Universal Access -> Mouse and Trackpad
 Near the bottom: For difficulties seeing the cursor
Adjust the slider to taste.

I confirmed that Aquamacs respects it.

In Lion anyway. Snow Leopard is so-oo last Tuesday.
