Nowhere you select Gentium. Something like this might be helpful:

	\usepackage{fontspec}
	\defaultfontfeatures{Mapping=tex-text}
	\newfontinstance\fonta{Gentium}
	%\newcommand\basetext{\fonta\fontsize{12}{14}\selectfont}

or simpler:

	\defaultfontfeatures{Mapping=tex-text}
	\setromanfont[Scale=1.01]{Gentium}	% Scale is nonsense without a non-
serif font

	\usepackage[applemac, utf8x]{inputenc}

is nonsense IMO. The text body is completely UTF-8. Make sure your
text editor saves the file correctly. Could be this packages turns
Greek into something like nothing.

Try to read some documentation on XeTeX and the fontspec package!
