Read the documentation on the fontspec package by Will Robertson. It  
will show how to access fonts and special font features in XeLaTeX.  
It is quite basic.

The xltxtra package, also by Will Robertson and also documented, is  
useful, too.

Finally there is the xunicode package to help accessing accented  
Latin characters. It translates the usual 7 or 8 bit LaTeX constructs  
like \={a} into real Unicode.


All else is strictly LaTeX – except hyphenation/Babel support. You  
hit in some language or dialect a problem, but when this happens,  
Jonathan Kew will have a cure for the "faulty" table!
