Howdy,

To make a keyboard shortcut to a menu item use System Preferences->Keyboard->Shortcuts->App Shortcuts and create it specifically for TeXShop. You must use the exact name of the menu item, including the real ellipsis, …, which is generated with Opt-; (at least on a US keyboard layout).
