Howdy,

The typeset popup menu on then Source Window's Toolbar will have the new engines listed.

Switching between pdflatexmk (via the directive) and pdflatexmk-dev would require the typing of the -dev addition to the directive. However, if you just want to check to see that the file compiles under -dev and examine the formatting without actually editing the source you can switch back to the Source using Cmd-1 and then simply Undo the -dev using Cmd-Z.

I rarely use the -dev engines for anything but simple testing.
