That helped quite a lot. I'm still not entirely sure why *I* might prefer one encoding to another, but at least I understand some of the Latex on Mac reasons for one over another.</div><div><br></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>For the time being, at least, I will stick with the Apple Mac encoding (since I figure there's SOME thought behind TS's defaults) and declare it with the \usepackage[applemac]{inputenc} declaration.
