You can type M-x SAS-mode RET  (you can use ESC for Meta, i.e., ESC x SAS-mode RET).
Does that work for you?

Looking at `auto-mode-alist', I see that all *.sas files should already show up in SAS mode (in Aquamacs 2.x).
