[OS X Emacs] aquamacs line wrapping

When auto-wrap-mode is on, The buffer contents are examined [upon loading a file] to determine whether to use hard word wrap (autofill) or soft word wrap (word-wrap). The variable `auto-word-wrap-default-function' is used to determine the default in case there is not enough text.
So, change that variable.
Alternatively, change the text-mode-hook variable.
The menu functions at the top of the Options menu refer to the current buffer only.
