[OS X Emacs] Aquamacs mucks up my key-bindings in one-buffer-one-frame-mode

Impossible to tell without seeing your concrete code from your Preferences.el.

Also, OBOF does not set key bindings like ^X ^E.  Only very few modes set that key bindings (such as SLIME's lisp-mode).
