Yes, look for `define-key' or `global-set-key' in the Aquamacs FAQ (on the Wiki, see Help menu).

Developers have been working hard to keep Emacs configurable so that you can privately map keys to whatever you wish, whether it's considered OK or not by Emacs UI standards.  So go right ahead!
