[OS X Emacs] help with fonts!

No matter what I try I seem to get proportional fonts creeping in to my
aquamacs configuration.

Does anyone have a simple set of instructions that will let me:

1.  disable autofaces and
2.  never, ever, ever see a proportional font?  I'm an old-school emacs
guy and I just want to always have a monospaced font.

I have looked at the customizations menu, and it is a maze of twisty
corridors all exactly alike.

No matter what I do, sooner or later I start seeing a proportional font
again.  Help!
