If I just replace everything from some older backup ??

> The TeX utility kpsewhich (actually a family of similar commands) should be able to determine whether (La)TeX can find the font files you installed. A better choice to typeset Greek (with or without Latin, Cyrillic, or any other scripts) are XeTeX and LuaTeX. The former uses the fonts installed on your Mac, the latter works similarly, but needs some efforts to make these system fonts known.
