I recently tried that approach, and found that it was more bother than worth it. More precisely, there are a few feature that I found really useful in Aquamacs that made me go back:
- handling of the clipboard, which allows tools like TextExpander to work out of the box (I could not make this work with plain emacs);
- ODB support, to easily edit anything from a text field inside Aquamacs with utilities like QuickCursor (there is a way to hack around this with plain emacs, but it require an external application always running);
- fast spell checking using OS X system (I found that flyspell with aspell was very slow).
