Right, but how am I to make this .eps from a snippet of a TeX code (just
the equation) in Mac OS X?

I licensed pStill.app for NeXTstep from Frank Siegert and prefer it to
the NeXT version for UI reasons I've mentioned previously---hopefully
once I'm done with my TUG presentation I'll be able to detail these more
thoroughly as well as some other suggestions.

Does that include supporting .eps or .epdf for Mac OS X as a pasteboard
type?
My biggest problem with Create is that it's not really suited for
direct, interactive drawing with an efficient interface like Altsys
Virtuoso / Macromedia FreeHand---any intent to improve upon that? In the
latter, I can choose the bezier pen tool, and draw and manipulate paths
without ever going back to the toolbox, just by toggling to select mode
by holding down Command....
Does TeXView's TeX EQ -> eps Service work in later versions? If TeXShop
were to add such a Service would it work?
