This is not exactly what you wanted, but teTeX comes with 2 scripts to
generate tfm and pk files for all ec and cm fonts. From the terminal do
allcm and allec. Also, remember that texconfig helps you configure a
teTeX installation.
I suspect that files generated with allec and allcm aren't found by
TeXshop (some configuration might be needed), but I haven't really tested this, because I use type1 cm most
of the time.
