[OS X TeX] Language.dat

Hello, 
I'm a newbie of TeX.
I have changed with texconfig the languages I need (italian).
But TeXshop continue to use babel like the old language.dat.
How I can do to make TeXshop understand I want no more german or french, but
I need italian instead?
