[OS X TeX] Newbie question

Hi all!
After having used Textures® for a looong period it's time for me to switch
to one of the Mac OS X TeX's implementations. I've downloaded and installed
teTeX, TeX Shop, and iTeXMac. It's a _completely_ new world for me! There's
a lot of things to learn...

With Textures® I'm using a self-made variation of Plain TeX. I made it with
Virtex. Is someone of you so kind to explain me how to do something similar
in this "new world"?
