I guess your problem is caused by the fact that you have not cm-super 
fonts installed (these are PostScript versions of several fonts 
including EC fonts, that is CM fonts re-implemented in T1 encoding). 
Then TeXShop uses the original EC fonts, which are files in METAFONT .mf 
format, and calls METAFONT to generate on-the-fly bitmap versions of the 
fonts in PK format. Hence the time taken to display your file, and the 
poor quality of the result; it should print OK, though.

In any case I think the first solution (use $<$ and $>$) is better, 
since you are not supposed to use < and > in text, only in math mode.
