[OS X TeX] Ordinary text within a formula

Guide to LaTeX p134 has a good page on it but fails to say how to set
two-by-three
within a formula.

Nothing of what I have tried has worked.
I get easily
two – by – three
but not
two-by-three

$two \textendash by \textendash three$

\textendash does not work for me
I tried to read Companion
