OmniGraffle (GUI)
AT&T's GraphViz
AutoGraf (UML, Based on GraphViz)

GraphViz uses a text-based format underneath, and can therefore be
generated automatically (with a little scripting). AomniGraffle has an
Applescript interface, and has been used for visualisation of internet
traffic on a web-site (for instance, more examples on the Omni site).

All produce PDF, which looks good on screen, and can be included without
fuzz in latex.
