I also do this, using single page mode, and this always involves 
positioning the horizontal and vertical scroll bars so that the text is 
centered in the window every time I open a document. It would be nice 
if TeXShop could remember this adjustment so that I don't have to do it 
every time I open a document. TeXniscope does this and I believe that 
iTeXMac does as well.

I have an older PB G4 with a screen resolution of 1152 x 768, and have 
to resort to eliminating the margins so that I can see the full body of 
the text at 100% in the previewer on one side of the screen while 
BBEdit occupies the other side.
