You could also use stakeout (  
http://michael-mccracken.net/blog/blosxom.pl/computers/mac/programming/ 
meetWatch.html ) to watch your source file for changes and call latex  
on it whenever necessary. Combined with an auto-updating previewer,  
that should make for a convenient setup.
