There is a project called "Aleph"

getting something usable out of the current Omega mess, hoping for a  
better future. I can't say more, as I'm not using it.

There is an alternative Unicode approach to TeX called XeTeX. It adds a  
lot of flexibility, and is well integrated with TeXShop and iTeXMac;  
however, you lose cross-platform compatibility, as XeTeX relies  
entirely on OS X font management. XeTeX has a web page
