Somewhere in your initialisation file (.emacs or similar) you can set
the variable TeX-output-view-style to do what you want.  In my case, I

   (setq TeX-output-view-style
         (quote (("^dvi$" "." "open -a TeXniscope %o")
	         ("^pdf$" "." "open -a TeXniscope %o")
	         ("^html?$" "." "open %o")
