[OS X TeX] TeXShop + external editor of choice?

I think with Carbon Emacs you want it to drive TeX, Make or whatever 
directly, and not use TeXShop at all.
After all, emacs is almost an OS, so it can do that. Others are in a 
better position to comment on that though.
If you are already comfortable with emacs, I'd stick to that, altough 
there are some tricks to enable quite a bit
of those keybindings in other Cocoa based editors (like TeXShop or 
iTeXMac, but not BBEdit or TextWrangler,
although many emacs commands are available there as well, just check 
the preferences):

I have a set of applescripts in combination with a shell script to call 
TeX from BBEdit in the terminal and
switch to a pdf viewer. With some  minor customisation of the shell 
script (some constants near the top of the file),
they can be used from TextWrangler as well. Since everything runs 
inside the terminal application,
things are much easier to debug. (Note: I just uploaded a new version, 
with TextWrangler scripts included, and
very easy support to call any variant of tex).
