Yes. This information is in the headers of every message sent out by  
the list. Expanding, you first unsubscribe from the regular list by  
sending a message to:

<mailto:MacOSX-TeX-off at email.esm.psu.edu>

Then resubscribe to the digest by sending a message to:

<mailto:MacOSX-TeX-digest at email.esm.psu.edu>
