I tried to use eps2eps too and saw the same: PostScript fonts get
rendered to bitmaps!
Maybe ps2epsi is a better optimizer. It generates as output a new file
which conforms to Adobe's Encapsulated PostScript Interchange (EPSI)
format. (EPSI is a well-known form of EPS that has at the beginning of
the file in the form of PostScript comments a bitmapped version of the
final page.) This file still has the PS fonts. Usage is simple:
ps2epsi file.eps [file.epsi]
