[OS X TeX] What encoding should I use?

I use gw-TeX with utf-8 and Emacs. You will need some more clicks to 
migrate. But you don't have to change anything in the .sty etc files of 
\texmf, because it's all English and plain ascii.

The only thing I did was to \usepackage[utf8]{inputenc} in my 
LaTeX-Files. Before I used latin-1 encoding, so I had to to translate 
all my .tex-Files to utf-8 using iconv.
