A possibility: install XeTeX <http://scripts.sil.org/xetex/>, then
write a file containing (in TeXShop):

	%!TEX TS-program = xetex
	%!TEX encoding = UTF-8 Unicode

	\font\tata="Helvetica" at 10pt
	\font\toto="Textile" at 10pt

	\tata La petite fille est allée à {\toto l'école}
	avec son panier.

	\bye

> More generally, what are the fonts available ?

All those that are available in Font Book.
