Not necessary. You can use use:

\usepackage{cmap}	% to copy&paste correctly from PDF
\inputencoding{latin9}	% û, ï, é, ç, à, ..., and €
\usepackage{textcomp}	% to have access to ª, ®, ₤, ℮, №, ...

Yes. Three TeX cracks have built a system (gtamacfonts) to use the  
Mac OS X fonts in (La)TeX. It's part of the most recent TeX i-Package.

Where? In TeXShop? Or in LaTeX? Here you could:

\usepackage{color}


You can visit this list's archive and search for Textures. It was  
mentioned a few times here ...
