You can tell Xcode to use CFLAGS like these: -I/sw/lib/freetype219/ 
include -I/sw/lib/freetype2/include -I/sw/lib/freetype2/include/ 
freetype2 -I/sw/include

My settings point to the latest libfreetype2 installation from Fink.
