[OS X TeX] how to automatically save before compiling?

Automatically: no. vim is a separate entity, and all saving has to be  
done manually there (just like with any other external editor AFAIK).  
If you want support for that, you'll need an applescript interface  
for vim (meaning that other applications can send commends to vim  
while it is running, as if you typed :s in the vim command mode).
