/etc/profile, /etc/bashrc, /etc/csh.login.

In your home directory files like .profile, .cshrc, .tcshrc,  
bashrc, .bash_profile, .bash_login.

You can make any of these shell RC files to "source" any other file  
with any file name you can or cannot imagine ...

And of course there is ~/.MacOSX/environment.plist.

BTW, when you do not quit Terminal after de-installation and open it  
afterwards, you won't see a change in PATH or path.
