[OS X TeX] pdflatex.fmt format file missing

Fink's teTeX probably provides fmtutil and fmtutil-sys, too. You can  
invoke this programme on the command line as

	fmtutil --help

to see what it provides. It probably allows to recreate missing FMT  
files with:

	sudo -H fmtutil-sys --missing


Usually a TeX installation is owned by some administrative account so  
that an average user may not alter the system and so the rebuild of a  
missing FMT file during a LaTeX run has to fail. Therefore you need  
to become a super-user temporarily and best just create the missing  
pieces. (Running as super-user LaTeX on your document would rebuild  
the missing FMT as well, but then you would not be the owner of the  
LaTeX output files.)
