Howdy,

I thought you'd never ask! :-)

Use the epstopdf package and make sure the TeXShop->Preferences- 
 >Engine pdfTeX programs are

pdftex --shell-escape

and

pdflatex --shell-escape

for TeX and LaTeX program respectively. You can check the Shell  
Escape Warning if you are worried about a document executing  
arbitrary code via a (La)TeX run; it will issue a warning if that is  
about to happen and allow you to abort.
