There's gaim ( http://gaim.sf.net ) which has two plugins, one called
"instant math", which can be found somewhere on the gaim project
page, and the other called gaim-latex, which has its own sourceforge
project ( http://sourceforge.net/projects/gaim-latex )
For OS X, there's Adium (http://adiumx.com), which internally uses
the libgaim, and also has a LaTeX plugin.
gaim / libgaim know lots of different IM protocols, and some of those
also support chats of more than two persons.
