You're right.
I have already verified that nothing was in my ~/Library/texmf tree:

[ulysse:~] mp% ls -alR ~/Library/texmf/
total 0
drwx------    2 mp  mp    68 Jun  8 16:19 .
drwx------   56 mp  mp  1904 May 25 08:50 ..

but

[ulysse:~] mp%  kpsewhich psfonts.map
/Users/mp/.texlive2007/texmf-var/fonts/map/dvips/updmap/psfonts.map

Since I suppress the .texlive2007 directory, all goes right.

.texlive2007 is used by default in texmf.cnf for TEXMFVAR and  
TEXMFCONFIG:

TEXMFVAR = $HOME/.texlive2007/texmf-var
TEXMFCONFIG = $HOME/.texlive2007/texmf-config

and these parameters ome before the others in TEXMF:

TEXMF = {$TEXMFCONFIG,$TEXMFVAR,$TEXMFHOME,!!$TEXMFSYSCONFIG,!! 
$TEXMFSYSVAR,!!$TEXMFMAIN,!!$TEXMFLOCAL,!!$TEXMFDIST}
