You don't need to! You could click through the file system to the  
texmf.cnf file, starting with (Disk:)Library, where you'll find a  
symbolic link to your TeX installation. A problem could arise when  
you'll try to save the changed file: I have no idea whether  
SubEthaEdit is clever enough or capable to use the Apple framework  
for elevated privileges, i.e. whether it would ask for your password  
and then could save a file that belongs to root into a directory that  
belongs to root and you mortal user have no other access than reading  
and searching.

I think this is an extra step when installing SubEthaEdit (or a  
Preferences issue?), that would put a copy of see from inside the  
application's bundle to /usr/local/bin or such ... and which might  
allow SubEthaEdit to work with "elevated privileges" ...
