Just to be sure, what does the next command report (taken from a
recent message by Maarten Sneep, and yes there's indeed a line break
in the command):

kpsewhich -show-path=tex -progname=latex| sed 's/:/\
/g'

Output should be something of the form:

.
/Users/<your-user-name>/.texlive2007/texmf-config/tex/latex//
/Users/<your-user-name>/.texlive2007/texmf-var/tex/latex//
/Users/<your-user-name>/Library/texmf/tex/latex//
!!/usr/local/texlive/2007/texmf-config/tex/latex//
!!/usr/local/texlive/2007/texmf-var/tex/latex//
!!/usr/local/texlive/2007/texmf/tex/latex//
!!/usr/local/texlive/2007/../texmf-local/tex/latex//
!!/usr/local/texlive/2007/texmf-dist/tex/latex//
/Users/<your-user-name>/.texlive2007/texmf-config/tex/generic//
/Users/<your-user-name>/.texlive2007/texmf-var/tex/generic//
/Users/<your-user-name>/Library/texmf/tex/generic//
!!/usr/local/texlive/2007/texmf-config/tex/generic//
!!/usr/local/texlive/2007/texmf-var/tex/generic//
!!/usr/local/texlive/2007/texmf/tex/generic//
!!/usr/local/texlive/2007/../texmf-local/tex/generic//
!!/usr/local/texlive/2007/texmf-dist/tex/generic//
/Users/<your-user-name>/.texlive2007/texmf-config/tex///
/Users/<your-user-name>/.texlive2007/texmf-var/tex///
/Users/<your-user-name>/Library/texmf/tex///
!!/usr/local/texlive/2007/texmf-config/tex///
!!/usr/local/texlive/2007/texmf-var/tex///
!!/usr/local/texlive/2007/texmf/tex///
!!/usr/local/texlive/2007/../texmf-local/tex///
!!/usr/local/texlive/2007/texmf-dist/tex///

In particular, check whether you get:

/Users/<your-user-name>/Library/texmf/tex/latex//

or:

/Users/<your-user-name>/texmf/tex/latex//

And which output do you get from:

kpsewhich texmf.cnf

Default with MacTeX should be:

/usr/local/texlive/2007/texmf/web2c/texmf.cnf

Hope this helps,
