Howdy,

Put the line

%%!TEX encoding = UTF-8 Unicode

near the top of the file before doing a Save As... and choosing  
Unicode. That will tell TeXShop to treat the input file as UTF-8 when  
it opens them again. While there are schemes to detect UTF-8 very  
dependably I don't think they're foolproof.

You can also set the default save/read for new files as UTF-8 in  
TeXShop->Preferences.
