[OS X TeX] Forcing the use of pdtlatex or dvips

TeXShop not really chooses a programme – which programme can  
guarantee a workflow? (OK, XeTeX, pdfTeX, and ConTeXt can do a bit  
like that ...) TeXShop selects an engine file, a more or less simple  
shell script, that implements what you wish to have. And you can  
register your wish with:

	%%!TEX TS-program = <your choice>

Notice the use of ``%%!´´ which makes it clear to every printer that  
the file is *not* PostScript, which the simplistic ``%!´´ indicates.
