[OS X TeX] xelatexmk and fontspec

We are working on a subset of a cv template I found. It came with
fontin but I would be happy to get it to run with anything at this
point.
How do I `Try using other fonts.'? I tried replacing fontin by
Hoefler Text in \setromanfont{} and by Optima in \setsansfont{}. That
did not work, tho.
