Jonathan already gave the right hints. There is one more problem with  
Preview: it does not re-read the PDF file if it has changed due to a  
new latex run. TeXShop or Skim are better suited for this incremental  
approach.

IMO the best solution is to use texdoc! This script is used to  
display any kind of TeX related documentation, and by this ability  
it's also able to display all possible TeX related output (DVI, PS,  
PDF, HTML, RTF, ...). One script, once perfectly configured (in TeX  
Live 2008, I think, only by environment variables, unless you can  
write Lua script), can substitute half a dozen highly specialised  
applications ... and you need to remember only one name!
