[OS X TeX] tell TeXShop in header what script to use

Put this at the beginning of your .tex file:

%!TEX TS-program =  pdflatex

if you want it to be typesetted by PdfLaTeX


%!TEX TS-program =  latex

if you wish TeX+DVi to be chosen.

See TeXShop's Help section (“Basic help”/”Alternate typesetting mode”  
for more details. The Macros menu and its ”Program” option will  
certainly be helpful to you.
