If you have bibliography completion enabled in TeXShop's preferences, you can type "\cite{foo" (or some variant of \cite) and hit opt-esc to get a list of possible completions.  It searches based on citekey, title, author, editor, and keywords, IIRC. 

TeXShop will launch BibDesk if it's not running, but doesn't do any parsing of the .tex files to figure out which .bib to open.  However, you can set BibDesk to open a default file at launch, or to open files that were open in your last session.

There are various other ways to insert citations, but this is the most efficient.  You can also use Services or drag-and-drop from BibDesk's main window or cite drawer.  See
