[OS X TeX] tilde problem

If sounds as if you're saying that tilde *always* behaves that way,  
throughout all Mac apps.  But when I type a tilde in (say) TextEdit,  
it behaves as a normal tilde.

What am I misunderstanding here?  Thanks.
