You can set it using the technique described here:

If you did not install via the MacTeX package, you need to replace "/usr/texbin" with "/usr/local/texlive/2009/bin/universal-darwin".

If you use the standard TeX Live UNIX installer, it won't set your path.  MacTeX will set your path, but upgrading the operating system after installing MacTeX will reset it.
