Howdy,
Sorry... as far as I know there are only three special colors defined for syntax highlighting in TeXShop; comments, commands and delimiters. You can change the color of these three; I've made comments a medium gray (so they recede into the background more), darkened the blue for commands and left the delimiters alone as a darker green.
